Ingredients
For crepes:
- 130 g rice flour
- 1 teaspoon ground turmeric
- 20 cl of coconut milk
- 1 egg
- 10 cl of water
- 1 pinch of salt
- Chives or chopped onion greens
For garnish :
Method
1. Preparation of the filling:
In a wok, fry the shallot, onion and garlic until golden.
Add the shrimp and fish sauce, cook for a few minutes until the shrimp are pink.
Add the bean sprouts and sauté briefly.
Season with black pepper and sprinkle with chopped fresh cilantro. To book.
Preparation of pancakes:
In a bowl, mix the rice flour, egg, ground turmeric and a pinch of salt.
In another container, mix the coconut milk, water and chopped chives or onion greens.
Gradually pour the liquid ingredients into the dry ingredients, stirring vigorously until you obtain a homogeneous paste.
Cover the bowl and let the dough rest for 30 minutes to 1 hour to allow the flavors to develop.
Cooking the crepes:
Heat a small amount of vegetable oil in a wok or non-stick pan.
Stir the pancake batter well to make sure it is even.
